World's Best Hot Chocolate

Makes 2-8 oz cups

1 1/2 cups whole milk
1/2 cup heavy cream
2 tablespoons powdered sugar
1/2 teaspoon espresso powder
4 oz bittersweet chocolate (preferably Guittard)
lots of whip cream

Step 1: Place the whole milk and heavy cream in a heavy saucepan and whisk in the powdered sugar and espresso powder. Heat until bubbles start to form on the sides, but the mixture isn't boiling.

Step 2: Take the pan off the heat and add the chocolate. Whisk in the chocolate until smooth.

Step 3: Pour out the hot chocolate into cups and serve with lots of whip cream.
